It surprised a lot of people back for seconds. ;) Peanut Butter French Toast From the Poverello Files Ingredients; • 1 Loaf heavy bodied bread • 1 jar peanut butter • Real Maple syrup • 3 eggs (separated) • 2 Tablespoons milk • ½ teaspoon sugar • Cinnamon powder to taste • Pinch salt • Peanut Butter Topping To Make Topping; Ingredients; • 1/2 Cup Peanut butter • ¼ Cup Maple syrup Combine in small pot while heating over LOW heat. (May use double boiler.) Stir constantly to avoid burning syrup. When well combined, remove to a pan of hot water to keep warm. Set aside. Spread peanut butter on ½ of the bread to taste (but not too thick). Cover with the rest of the bread and press gently so that they will hold together. In a bowl whisk egg whites until soft peaks form. In a small bowl whisk together egg yolks and milk. Whisk in salt and cinnamon and fold into egg whites. Heat ½ teaspoon vegetable oil in a heavy skillet. Dredge PB sandwiches in egg mixture to coat both sides and place into hot skillet. Cook until lightly golden and peanut butter inside is starting to melt. Place on warm plate and serve with hot Peanut Butter topping. Also try serving with warmed fruit toppings.
