Those of you who know me well, know when I cook these days, I cook up several meals at once and then put them in containers in my fridge and freezer for later. Well, I was cooking last night, and had some sweet potatoes sitting there and was inspired by this recipe... So, since I didnt have all the ingredients for that sauce, I went looking for another one and made it. Wow, talk about good. Its definitely budget friendly and it is filling. Heres what I did to tweek the recipe for my tastes. I substituted broccoli and carrots for peppers, plain rice for the brown. (I dont deal well with brown rice.) Added some left over chicken and made the following Thai Peanut Sauce. chow/recipes/10658-peanut-sauce Ill stick that one in a reply to this post so it pops up with a picture too. Man it was good, I had one for lunch today, and Ill definitely do this one again!
