Thought Id like to share this, Why we do what we do and what we sacrifice, just to feed people and wanting to put out whats best but still , us Chefs sometimes always get the short end of the straw, from owners, Front of house staff and even a weak link in the kitchen, we chefs cannot miss a beat it has to be a well oiled machine, i always say to my chefs now, we are the closest thing to god.. we have to be perfect everyday, we have to deliver and we cannot afford a mistake because people are so unforgiving when you make a mistake on their food but sorry to say this bloody tradies and some people in other working sectors can get away with murder.. but still we keep coming in everyday, morning till night,10, 12 16,hours a day and ive personally done a few 18 hour days prepping till 4am in the morning HEY Matt Weller ; ) lol.. sometimes short staffed or if someone called in sick and everyone has to run off their asses, WHY?? there is no excuse, guest come in they eat, they expect everything to be perfect to us the show must still go on whether they pay $10 for a meal or $100++ for a meal , then you get those who Ammend the menu or dont like this before they even tried a dish as a whole, or wanting a well done steak on a weekend you are doing 150+ covers and getting angry because its taking more than 20 mins or so .. Yes we all love our families and we want to enjoy time with our friends we say that we know that but sometimes without realizing we put the food , the customer our kitchen team above all of these, and for what?? getting screamed at sometimes.. abusive guest because something wasnt quite right .. for someone to come in , enjoy their meal, scoff it down in 15 to 20 mins and go.. its funny but we all put on that uniform with pride, and come in with a 100% and try so hard to please everyone else. and the chef that leads us. Im not having a Rant i just want people to watch this Doco. if its already out or when it comes out. Even if you still dont understand why we do it, I ask that you appreciate what we do, and who we do it for and i hope that if you have a great experience and enjoy a meal that you may just sometimes walk up to the kitchen and thank the chefs who are behind the stoves cause thats what drives them it is what drives me and i know it would mean to allot to all the other chefs out there, and to my past colleagues and especially Gary Farrell and Laurence Griffin i cannot thank you enough for the training , knowledge and the hours that i had to put in , it has not only made me a better cook but a better person. I will always appreciate all that i have learned from all you guys. ; ) Thank you from the bottom of my heart! and to those who who want to be a chef or start an apprenticeship, dont be put off by what you see here,if its truly in your heart to cook it is more rewarding than you can ever imagine, its really the top, top end restaurants and hotels that are like that day in and day out but you meet some of the best people and friends in the process.
