Thoughts on Easter Dinner for two - in Lucca: my sister, Phyllis Castaldo, posted a recipe for pieroghis - I think I will modify the recipe and use 0% fat Greek yogurt wherever sour cream is called for, and make them as our first course dish, followed by a stuffed veal roast (in Italian the cut is called Cimalino - dont know in English)- the stuffing will be spinach and sausage I think. Which I will serve with fresh asparagus. Then a garden salad with lots of colorful veggies and maybe pistachios or almonds. Dessert... pizzelles made with my moms recipe.. approved? ;)
