Three Seed Rye & Almond Meal Slice with Lime and Crystalised Ginger (egg free) I just love this recipe. It is delicious and easy and unpretentious! The flavour is nutty, zesty and just a little bit sweet and the texture is moist and a good mix of crunchy and smooth. You can do a sugar free version by simply omitting the rapadura but even with the sugar its a healthier slice option with all its nut and seed goodness! 1 cup almond meal 1 cup rye flour 2/3 cup rapadura or raw sugar 1 teaspoon baking powder 1 teaspoon baking powder I teaspoon nutmeg ground 1 teaspoon vanilla paste 2 tablespoons chia seeds with 6 tablespoons water (to make chia egg) 1 cup homemade yoghurt 1/2 cup crystalised ginger 1 lime, juice and zest 2/3 cup green tea oil 1 cup pepitas (pumpkin seeds) 2/3 cup flax seed 1/3 cup flax seed 1) Preheat oven to 200C. 2) Prepare the chia egg by placing the chia seeds in a small bowl with the water and set aside for 10 minutes. 3) Meanwhile, combine the almond meal, rye flour, baking powder and soda, nutmeg and sugar in a large bowl. 3) Food process the crtstalised ginger and 2/3 cup flax seeds until very smooth then add to mixing bowl. 3) Mix the yoghurt and oil with the dry ingredients and stir until evenly combined. Add vanilla paste, lime zest and lime juice. 4) Mix in chia seeds, pepitas and whole flax seeds until the seeds are evenly dispersed throughout the batter. 5) Line a medium sized cake tin with baking paper and spoon in batter. Sprinkle top with additional flax seeds for decoration. 6) Bake at 200C for 45-60 minutes.
