Today I butchered two local steers. Working alongside and directing three other butchers, we took huge halves and broke them down into prime chuck roasts, sirloin steaks and roasts, and of course the most popular - steaks. Take a look at these steaks: hand-cut Delmonico and hand-trimmed T-Bone... That marbling is just gorgeous! Did you miss out on ordering a mixed quarter?
