Today everyone is talking about probiotics because with our modern diets we no longer get the right bacteria into our gut. The problem is that probiotics are so expensive! Did you know that you can make your own at home with vegetables and it’s so easy and inexpensive to do? Fermented foods were made by our ancestors as a means of preserving food, and in the process, I’m sure without them realising it, they were giving their gut the best thing possible. Fermented veggies are alive with all the right stuff your gut really craves, so do your entire digestive system a favour and make some today! There are many recipes for fermenting veggies and you can basically use most vegetables, but cabbage is the best and should be added to everything, I believe. I used cabbage and carrot and added 15g Himalayan salt to every kg of chopped veggies. Wash and save the large outer cabbage leaves for later. Shred or chop the vegetables (any size you prefer) and put everything into a big bowl and start kneading, massaging and squeezing the veggies with your hands until lots of water is produced and the veggies are fairly soft (it took me at least 30min). Pack very tightly into sterilised bottles and push the mixture down and seal with the large cabbage leaves you saved (all the vegetables must be under the water) cover with a kitchen cloth tied around the top (I don’t seal my bottles – it needs to breath). Leave on a countertop in a cool place for about 5 to 7 days. When the fermentation is tangy enough for you, take the large cabbage leaves out, seal and refrigerate; this stops the fermentation process and they will keep for a very long time; the only problem is they taste so good that they will never last that long :) I found this youtube very good and it is just over 10 min long. https://youtube/watch?v=HXFifwcbPqI
