Today is National Filet Mignon Day. Whether you prefer yours broiled, grilled, roasted or pan fried, Americans have been enjoying the melt-in-your mouth “dainty fillets” since the late 1800s. Due to the low levels of marbling and fat, this tender and lean cut of meat is often prepared with a slice of bacon to add flavor and keep it from drying out. Sliced from the short portion of the tenderloin, the filet mignon — meaning petite fillet — is one of the most tender (and priciest) cuts of beef. Today also happens to be the day that Julia Child passed away, in 2004. She probably would have liked a nice steak and a few glasses of wine.
