Toffee Almond Sandies: 1 cup butter (no subs), softened; 1 cup sugar, 1 cup powdered sugar, 1 cup canola oil, 2 eggs, 1 tsp. almond extract, 4-1/2 cups flour, 1 tsp. baking soda, 1 tsp. cream of tartar, 1 tsp. salt, 2 cups chopped almonds, 6 oz. package English toffee bits. Cream butter & sugars; add oil, eggs and extract. Combine dry ingredients and add gradually. Stir in almonds and toffee bits (dont overbeat cookie dough or theyll be tough). Shape into 1 balls and flatten with fingers or a fork. Bake 12-14 min. at 350 until very lightly browned. Makes about 12 doz. I make half and freeze half of the dough of another day.
