Tonight we are having BBQ chicken and Mexican corn as a side. Take the corn off of 4-5 ears of corn and sautée in a skillet with a little butter salt and pepper for five mins. Then melt a couple of large spoonfuls of cream cheese into the corn. Add a fresh chopped jalapeño ( I chop mine very fine , without seeds ) and let all melt together for about ten minutes. Its creamy with a little heat. Adjust amount of chopped jalapeño for amount of heat you like.
