Tuesday group ride this morning, five of us. I lagged at the back, the waaaaaaay back, however my energy levels were pretty good, just wasn’t pushing myself hard. I am now 5 weeks and one day gluten-free. My understanding is that it will take 3-6 months before my body sorts itself out, and so my energy levels might fluctuate, meaning I will still get days of low energy. I am learning that I need to get some carbs into my body the night before a bike ride and the breakfast pre-ride. Last night for my dinner I baked a sweet potato along with some gold beets. About half an hour into the baking I added a skinless chicken breast to the oven to bake. When the beets were done, I put two on my dinner plate along with the sweet potato, and I placed the rest of the beets in the fridge to eat cold on salads. I chopped the beet greens and cooked in boiling water for exactly 3 minutes, which is the time that allows the greens to cook but doesn’t destroy any of the nutrients. I dressed the greens with lime juice, olive oil and garlic. I put butter and garlic on the sweet potato and gold beets on the dinner plate. I put an onion relish on the chicken breast. That was my gluten-free dinner, and the carbs were in the sweet potato and two small gold beets. I didn’t have any energy problems on the ride this morning, so guess the carb balance was effective for me.
