Up bright and way too early this fine morning in N.E. Michigan. Its a bit cloudy but otherwise fairly nice. I do believe we are going to have a warm day for a change though. Its only 9am and almost 70 degrees, and the Weather Channel app on my phone says the high will be 80. Might have to turn the A/C on. I am personally a bit on the warm side because I made Angry Eggs for breakfast. For those of you who dont know what Angry Eggs are its an Italian dish made with Marinara, Eggs, Slivered Red Onion, Sliced Fresh Jalapeno, and Parmesan Cheese (the real stuff NOT Kraft). Pour the Marinara (I use Raos Arabbiata) in a baking dish, place eggs on top of the sauce, top with Onion, jalapeno, and parmesan then bake at 400 for about 5-8 mins. Turn on broiler and let parmesan begin to brown before removing. The eggs will be runny so if you want them a bit more done bake longer or start out with already warmed sauce. Its really easy and delicious especially with some Toasted Italian or Chibata bread. Its a bit spicy but not bad. Im actually trying to figure out what I should do today. Ive already got some house work done but I REALLY dont want to do that all day. I do have a book or two that are begging for attention so I will have to attend to them at some point, but I want to get out for a bit. Since my knee wont allow for a hike or even a short walk my options are limited. Perhaps a trip to the bay to sit and watch the waves roll in, or a ride through the country. Ill decide later I guess.
