WELSH RAREBIT INREDIENTS ¼ lb. cheddar cheese. ¼ cup milk. 1 egg. Salt and pepper. 2 slices bread. 1 teaspoon butter. METHOD 1. Grate cheese on a course grater. 2. Place in a saucepan with milk and stir over fire until cheese has melted. 3. When quite hot, stir in beaten egg, continue to stir until the mixture is smooth. Do not boil. 4. Season with salt and pepper. 5. Place on hot buttered toast.
