Want a little bit different treatment in a stir fry? Ingredients: A pot of your favorite pasta--I used vermicelli 1/2 a large onion, diced 4-5 sticks of celery, diced 1 large zucchini. sliced 5 green onions 4-5 cups (1 bunch) of bok choy, cut into 1" or so pieces 1 can water chestnuts 1 can mushroom stems and pieces 1 handful salted peanuts 2 packages of peeled, deveined, raw shrimp olive oil 2 Tbl garlic paste black pepper to taste 1 Tbl ginger Directions: Prepare all items needing cutting before you start. Cook pasta and set aside. In large skillet or wok, sautee onion and celery with garlic, pepper, and ginger in hot olive oil. When onions are cooked, add shrimp, and cook till they begin to turn pink. Add green onions, zucchini, peanuts, mushrooms, and water chestnuts. Stir well and heat throughout. Add bok choy and cover, allowing it to steam at the top of the dish. When bok choy starts to soften, uncover and mix all together. Be careful not to steam too long because you still want the bok choy somewhat crunchy. Serve with soy sauce over pasta. Enjoy
