We had our family Thanksgiving today. Tried a new way of cooking the turkey (found online). Rubbed cavity with juice of half a lemon, then rubbed in 1 TBSP of salt, filled cavity with celery leaves and ends, some sprigs of parsley, sliced carrots and onion wedges; rubbed outside with olive oil and salt then roasted on wire rack, uncovered, BREAST SIDE DOWN. Start at 400 degrees for one hour, then 325 degrees until breast reaches 160 degrees then remove from oven. Tent with foil to keep warm (will continue cooking while curing to reach the required 165). Let it stand for 15-30 minutes before carving. The most unbelievably moist white meat ever!!! We had 22 pound turkey, cooked for 4 hours. Definitely worth a try :)
