We have just launched our new summer desserts. Here is how you make our delicious Poached strawberries & elderflower sabayon; ELDERFLOWER CORDIAL 25 elder heads Zest and juice of 3 lemons and oranges 750grms sugar 1.5ltrs water METHOD Place elder and zest and juice in bowl. Bring water to boil pour over, cover with cling and leave to infuse 24hrs. Strain through a cheese cloth and place in pot with sugar and heat till sugar dissolved. Place in bottle. POACHED STRAWBERRIES 1kg berries 200grms sugar 600ml water 1 bunch mint METHOD Top berries and cut in half, place all ingredients in pot except berries. Bring to boil and simmer 5mins, remove from heat add berries bring back to simmer, remove from heat and cool. ELDERFLOWER SABAYON 8 yolks 150grms sugar 500ml cream (slightly whipped) 180ml elderflower cordial METHOD Place yolks and sugar in bowl and liquid, whisk over Bain Marie till trebled in volume 5 to 6 mins. Remove and cool, Then fold in whipped cream. ASSEMBLY Divide strawberries evenly between glasses pour on some of the poaching liquor. Then place sabayon on top and caramelise under grill or use blowtorch. Enjoy :)
