We here at Maneuls El Burrito are starting something new!! Each Friday we are going to do a Spotlight of our Customers and Employees. So send us your stories and pix to our inbox and we will spotlight them. We are excited to get to know more about all of you!!! We are going to kick this off with this Amazing couple!! Del and I have been together since 2002, when I moved here from Ohio, we married in 2005. Del was born and raised in Roy, UT. I was born and raised in San Diego, and have lived all over this country. When I met Del I learned of his heart condition. Unlike all his other girlfriends, I stayed and convinced him he could still do things in spite of his heart. I proceeded to take him hiking nearly every weekend. He says I tried to kill him hiking him to Timpanogos Cave, but he made it when others were turning back. Del and I also enjoy going for drives, filling the car up and picking a direction. We have explored all the surrounding states and our own. He has taken me to ghost towns and we followed the Pony Express Trail one day all the way to Nevada. A memorable drive took place on New Year’s Eve in 2003. We headed south and ended up in Escalante National Park. We got hammered by a blizzard and we nearly didn’t make it home. We also enjoy off road racing, drag racing and now we own a Jeep…. Look out Utah, we are coming!! Del and I are huge Steelers fans and I took him to a game on Christmas Eve 2012 at Heinz Field in Pittsburgh. We are so ready for football season to finally start. Del introduced me to El Burrito not long after we met. I do not know how long he ate there before he met me, but we have been enjoying the cuisine on a regular basis for over a decade. Having lived in New Mexico for 12 years, I find the food at El Burrito the closest I can get to New Mexico here in northern Utah.
