That way I know there will be one item that will keep my nutrition on track. This salad delivers on healthiness and taste. It has eye-popping colors and wake-up-your-taste-buds flavor. In terms of nutrients you get protein from the edamame, cancer fighters from the purple cabbage, beta-carotene for eye health from the carrots, and vitamin C from the red bell pepper. Did I mention the dressing? Ginger-white miso. Both ingredients aid in digestion. For taste, ginger adds zing and white miso adds punch. If youre unfamiliar with this ingredient, it is fermented soybean paste. Dont that let deter you. Mixed in a dressing (or soup) it lends umami flavor (like mushrooms, Parmesan cheese, or soy sauce.)
