What do you do when you dont have anything laid out to fix for dinner but two leftover chicken breasts? Chop up some red onions, red, yellow and orange mini peppers, some black olives and garlic. Throw them in a pan with a splash of olive oil and Italian seasonings. Add some chopped tomatoes and sun dried tomato pesto then toss with some whole wheat penne pasta. I dont know what you call it but it tastes pretty good!
