When Sara Travis decided to start a mobile coffee-vending business in June 2013, there was no question that she would set up shop in her hometown of Chicago. For more than a year, Sara petitioned the city of Chicago to give her a permit so she could legally operate her growing business throughout the city’s neighborhoods. Unfortunately, Chicago bureaucrats werent willing to work with her. In 2014, she and her business shipped off to Austin. “We can always come home to Chicago, and that’s something we want to pursue, but Texas is ready for us.”
