White cows with vivid black spots known as Holstein Dairy cows on a deep green pasture makes for an ahhhhhh moment. Its a beautiful picture. In Illinois there are about 101,000 dairy cows. There is room for more dairy cattle because Illinois is fifth in population but ranks 21st in amount of milk production. Illinois ranks first in ice cream production (first ice cream cone served at the worlds fair in St. Louis at the turn of the century.) We rank second in production of cottage cheese, fifth in sour cream and 12th in cheese production. According to the Illinois Milk Producers Association the current Illinois lady cows produce 4.5 more than in 1940 yet we have fewer dairy cows than in 1940. Thwarting average dairy farm has about 135 head per farm. I like chocolate syrup on my ice cream thank you.
