Wishing my CAL family a very Happy Diwali in advance ;) !! May you guys always keep shining and keep creating miracles in you kitchens! Presenting.. Edible Chocolate Diyas with royal icing for you this Diwali! It is that time of the year again when spirits are high, markets and stores are flooded with last minute shoppers, there are crazy traffic jams on the streets, evenings are filled with the sound of crackers, and there are lovely aromas coming out of kitchens of every home! Deepawali (diwali) is almost here!! As you already know, I am a sucker for celebrations and festivities and in India, Diwali is the grand daddy of them all. The word ‘Deepawali’ is derived from the Sanskrit word ‘deepa’ which means light/ lamp and the word ‘avali’ means a row or line. Diwali is one of the biggest Hindu festivals which is celebrated with great enthusiasm and joy. It is known as the festival of lights and signifies the victory of light over darkness, knowledge over ignorance, good over evil, and hope over despair. Beside the food, crackers and new clothes, celebrations also include lighting of diyas or lamps outside doors and windows, around the house and in temples. In the week leading up to Diwali, most people visit their friends and family to wish them and exchange gifts. This year to woo my guests, I decided to prepare well in advance for the upcoming festival. Nothing signifies diwali more than diyas (lamps), so I decided to use them as a theme to create some interesting desserts. When I was thinking of making these treats, the first though that came to mind was the use of royal icing. Its a brilliant way to decorate without having to fear that the icing will get smudged. Royal icing sets beautifully and stays that way for a long time (unless you chip it off yourself). Also it increases the shelf life of the product. You can store these in the refrigerator for 15-20 days and you can pile the diyas (lamps) on top of each other or in boxes if you wish to gift them. These chocolate diyas are a joy to make and get done in no time! In fact, it is a fun way to engage the kids during holidays and let them show their creativity!
