Yesterday we had our first boiling of sap for Maple syrup. We received 1 gallon of syrup from 30 gallons of sap. That might sound like not much but that is incredibly good. We have Silver maple trees and that variety is not as rich in sugar as are Maple trees. Normally you expect a 30:1 ratio from a Maple tree and about 40:1 from a Silver maple. This is awesome! About 30 minutes ago I went out and collected an additional 10 gallons of sap and the trees are still dripping so more to come. I hope the temperatures continue to vascilate between above and below freezing so this will continue. By the way, I wish to share that at the moment of taking the final strained syrup and begin pouring it into bottles is when I feel an overwhelming sense of humbleness. It amazes me that nature has this wonderful tasting sweet product called syrup and all that is needed is to boil it. There are not additives. Wow! Have a good day.
