Last week I met a lady, Ruth Tidy at the Leisure Centre and we started talking about "eggplant" and Ruth left me a recipe at the greenhouse this week that I would like to share. Here it is: Grill oiled eggplant slices Sauté onions Cut tomatoes slices In flat casserole layer: Eggplant, onions, tomatoes repeat 3X. Topping Sauce: 1 tsp basil 1 tbsp vinegar 1 tsp worchestshire 1 tbsp sugar 1 tsp garlic salt 1 tsp pepper Pour sauce over layered veggies. Dot with 3 tbsp butter. Sprinkle grated cheddar cheese on top. Bake @ 350 degrees - 25 minutes. There is no exact measurements for the veggies so use as many as you like! Enjoy and THANKS to Ruth for the new recipe!
