Zapiekanka – the original Polish fast food Zapieknaka is baguette or even bread, usually topped with mushrooms, cheese and meat, and vegetables, prepared and placed in oven until cheese melts and the baguette is crispy. Zapiekanka are a popular street food in the bigger cities of Poland. A very popular type of Zapiekanka is a students Zapiekanka, sometimes also called whatever Zapiekanka. It is made of whatever is at home at the moment, and the only compulsory ingredients are bread and cheese. Its very commonly served (as an alternative to sandwiches) to unexpected guests if the host has nothing else to serve. Its also a quick dish for students, sometimes taking even less time to make than an instant soup. As it can be stored in the fridge before baking, many students prepare a full plate of them at the weekend so that they have something quick and nutritious to eat for the whole week. Easy to see why it’s referred to as a Polish fast food. So instead of pizza this weekend, grab a baguette or a loaf of French bread, cut it in half, and let your imagination soar. Layer the baguette with meat (ham, salami, other lunchmeat), sautéed mushrooms, vegetables (raw or cooked), grated cheese (your choice). Place in oven or toaster oven preheated to 300 degrees. Toast (usually 5-7 minutes), until cheese is melted. You may want to add a little ketchup, and enjoy. Your creativity will help you design your Zapiekanki (you will eat more than one Zapiekanka).
