finally got around to roasting that danish pork roast!! first, thanks for the great hunk-o-pig!!! beautiful fat layer and skin!! this is why its good to know your butchers!! simply scored the skin and seasoned with salt/clove/mustard/bay leaves....roasted at 450 for 30 minutes, then lowered the temps to 350 till it hit 140 internal....it was delicious and the fat and cranklings were like pig candy!!! thanks amanda and derek!! (p.s. served it up with baked sweet taters and sauted onions/apples)...great meal!!
