from the Texas A&M Extension kitchen of Mary Sue Cole.. Fall brings football schedules, which often means quick cooking to eat and get out the door. Hope you enjoy this one, it’s a family-pleaser! HOT CHICKEN SALAD 2 cups cooked, diced chicken 2 cups diced celery ½ cup sliced, toasted almonds 2 tablespoons chopped pimiento 2 tablespoons minced onion ½ teaspoon salt 2 tablespoons lemon juice ½ cup mayonnaise or salad dressing 1/3 cup shredded cheese 2 cups coarsely broken potato chips Combine all ingredients except cheese and potato chips. Place in prepared baking dish. Sprinkle cheese, then potato chips on top. Bake in 350 degree oven until hot. Makes 6-8 servings.
