his is the recipe I used for my Christmas sugar cookies. It’s THE easiest recipe so off the top of my head here goes: 114g of butter softened (not melted) 1 cup of sugar (I use castor sugar) ½ teaspoon of salt 1 teaspoon of vanilla extract (tasted much better than essence) 1 egg (room temperature) 2 cups of flour Mix butter, sugar and salt together until well blended. Add the vanilla and egg and mix more. Lastly add the flour until everything is well combined. Roll the dough into a big ball then flatten into a Frisbee. Wrap in cling film and refrigerate for at least half an hour. Once the dough is nicely chilled, roll out onto a lightly floured workspace. I usually make my dough about 6mm thick when using cookie cutters. Lay the cookie dough shapes onto a prepared tray (lined with baking paper) and refrigerate for another 30 minutes (well that is what the recipe suggested – but I only did for about 15 minutes coz it was getting late). When ready – bake for 10-12 minutes (or until they just start going a little golden). For what it’s worth I got 50 cookies out of that recipe in the shapes of snowmen, Christmas trees, holly leaves and stars. 16 December at 22:22 · Like · 2
