the reason why i am baking bread is that... how can you call something a bakery, when you dont bake bread? and the only closest thing that you can bake is a choux bun? so i obsessed with the idea of baking bread for 2 months... i went for brioche, bec it has more challenge... and i dont want to compete with other panaderia making pandesal... i want something better than pandesal! so making brioche using a sponge of 2-3 days old. =)
