2015 - Week 3 - Gluten. Is it the right thing for you? So what is all the hype about with so many people going gluten free these days? Gluten is a protein composite found in wheat, including barley and rye. For those diagnosed with celiac disease (an autoimmune disease that attacks the small intestine), a gluten-free diet is the only treatment. Aside from gluten, wheat is a highly addictive complex carbohydrate as it contains a special protein called gliatin (not contained in wheat products years ago), which has the same effect on brain receptors as opium. Gliatin stimulates the appetite, creating incessant hunger and cravings for more wheat products. Forty years ago, wheat was not mass-produced like today and did not contain gliatin. If you decide you want to be wheat or gluten-free, you still need to be diligent in reading labels as they may contain rice flour, cornstarch, tapioca starch, and potato flour which will also increase blood sugar similar to wheat. Should you reduce or eliminate it? Well two years ago, I decided to eliminate wheat from my diet and I have never felt better! No bread, pasta or other foods containing wheat, which helped, reduce hunger; cravings and those sugar highs and lows. Now every once in a while I do eat something with wheat but if there’s a choice, it’s wheat free!
