24 Day Challenge I’m back at work which meant really taking the time to be intentional with my meal planning. Both Monday & Tuesday were very similar (differences are in parenthesis). I realized how difficult it was going to be to get my ‘gallon’ of water in throughout the day working in retail. I noticed that we carried an Ozarka jug of water that was 100oz (a little less than a gallon) so I broke down the job by hour to ensure that I was staying hydrated equally throughout the day. Its faint but you should see green sharpie with times. Pre-Breakfast 5:30am: Mango Strawberry Spark with 8oz of water Breakfast 6:00am: Fiber Drink with 8 oz of sugar-free, pulp-free orange juice. Cup of Kashi shredded wheat with a hand-full of blackberries & almond milk. Mid-Morning Snack 9:30am: 1/4 cup of raw, unsalted almonds & 2 cups of strawberries. (Today I had 1/2 a honey crisp apple & a tbsp of Justin’s Chocolate Hazelnut butter). Lunch 12:00pm: Leftover Quinoa, Sweet Potato, & Bean Chili. Recipe here Post Lunch 1:30pm: Fruit Punch Spark with 12oz of water Mid-Afternoon Snack 3:30pm: 1/2 a cucumber with cayenne pepper, chipotle chili pepper & balsamic vinaigrette. Hand-full of raw, unsalted almonds. (1 cup of carrots instead of cucumbers) Mid-mid-afternoon snack: 5:30pm: I was staaaarving when I got home from work so I have a large rice cake with peanut butter Dinner 7:30pm: We went out to dinner to try a new restaurant & I got Rock & Roll Tofu & veggie Spring Rolls from Pho Hoang. Not the best but it’ll do. (I had leftovers tonight). Nighttime Snack: None (I made banana ice cream, get excited!)
