A discussion of CO2 in beer kind of jumped the rails of the original question, so I thought Id spit the thread - offer this thought, and see what people think... I dont know the exact math, but Id guess 80% of making good beer versus mediocre beer is process, because one mistake can ruin 100% of a batch. The next 10% that makes the difference between good and great beer is the quality of the ingredients, that would include the gas (CO2) you use, its an ingredient. The remaining 10% that makes the difference between a great beer and a fantastic beer would be split between having a fantastic recipe and attention to detail. You can only make an epic beer if you have a fantastic recipe, pay attention to finite details, use quality ingredients, and have a solid process. Thats not to say you cant make a good drinkable beer if youre a lackadaisical brewer - that would encompass the majority of beer people drink. But if Im going to spend time and money to make my own beer, Im disappointed if its not a great beer at minimum.
