A few tips for anyone out there trying to eat healthier this New Year or taking part in Operation Transformation along with a recipe as promised at last weeks talk at Operation Transformation. Enjoy!! We should all eat the way our grandparents ate, whole food (real food not processed, no additives only add time to eat right. Plan your weekly meals Its not how much food you eat , its what you eat. To control portions use a smaller plate. Eat the right food in the right combination and at the right time Instead of thinking about what you cant eat, think about what you can add to your diet, plant based foods (beans and vegetables) Healthy fats like nuts and avocados and make sure your diet has the rainbow effect with lots of different colours. Recipe From the kitchen of: (The Mystic Celt) Dish description: Teriyaki Beef Number of servings: 4 PEOPLE INGREDIENTS: 1 lb of beef cut into strips 1 tbsp teriyaki sauce 1 tbsp apple cider vinegar Juice and zest of 1 lime 1 tsp turmeric 1 tsp grated ginger (best grated from frozen) 1 med onion sliced 2 clove garlic sliced 1 red pepper sliced 1 yellow pepper sliced 1 small broccoli (blanched) use stem as well as florets More teriyaki sauce 6 oz uncooked brown rice (cook according to packet instructions) INSTRUCTIONS: Marinate beef in first 5 ingredients and make sure it’s coated well. If it’s cheap beef marinate for at least 24 hours, 48 if you can. If it’s an expensive cut marinate for an hour. Heat your pan until hot and add a tbsp of Wicklow rapeseed oil. Cook the beef in 2 batches (if you add too much the temperature of your pan will drop) and using a slotted spoon remove beef into clean bowl. Add in 1 cup of water and let bubble to deglaze your pan. Use a wooden spoon to lift all sediment off the bottom of pan. Pour this liquid onto your beef. Wipe pan dry and add another tbsp of oil and when hot cook onions, peppers, broccoli and garlic. Sprinkle 1 tbsp of teriyaki over vegetables and add in rest of beef and liquid. When all is piping hot, serve. You can add more teriyaki depending on taste TIPS/NOTES To blanch broccoli put into boiling water for 2 minutes and cool down in ice cold water, this keeps it bright green, I then use the same water for cooking the rice in.
