Cook and drain spinach. Season with salt and pepper while still warm. Cover and set aside 2. Coconut oil a pan and set to medium heat- cook the onion and pepper until tender. 3. Add the eggs and scramble until completely set. 4. To serve, make a bed of spinach on a plate. Top with the scrambled eggs.
