A great way to avoid refined sugar is to bake a treat every week so when your sweet tooth is triggered be it after dinner, when youre stressed, at work... you have something on hand that isnt a bad choice. Every weekend I try to do this not only for me but for my family. Quick and simple recipes are important as I dont have a lot of spare time and I love something that I can just make in a food processor or thermomix in five minutes! This recipe is my new go to! I made three of them on the weekend and put two in the freezer so life is easier!! Lemon, Blueberry and Yoghurt Loaf 2 cups of oats 11/2 cup spelt flour (or whatever flour you like) 1 1/2 tsp baking powder 1/2 tsp bi-carb 1 1/2 cups plain unsweetened yoghurt 1/4 cup coconut oil (or butter) 2 eggs 1/2 cup organic rice syrup (or honey/maple syrup though these have fructose) 1 cup blueberries 1 banana 2 tsp vanilla juice and zest of 1/2 lemon Lemon frosting juice and zest of remaining lemon 2 Tablespoons of rice syrup or honey 2 Tablespoons coconut oil 1. Preheat oven to 180 2. In a food processor or thermomix blend your oats until really fine... almost a flour then add in your spelt flour, bi-carb, baking powder and mix lightly. 3. Next add your rice syrup, vanilla, eggs, yoghurt, coconut oil, banana, juice and zest of a lemon and mix really well. 4. Stir through your blueberries and then pour into a loaf dish. 5. Cook for 35-45 mins depending on your oven. Once cooked make the icing 1. Mix the coconut oil, lemon zest, lemon juice and rice syrup together and pour over your warm cake. Serve when cool with butter!
