A question from a reader Hi Kate, I would love advice on ideas for tasty, healthy, balanced veggie main courses that are easy and quick to make! Is that possible? Hi Sure its possible. As someone who only uses fresh produce, no canned/ready-made food, for me the secret is to be organized, so first a couple of tips: 1. Many legumes require a period of soaking prior to cooking, so I always cook large quantities and keep a selection, ready cooked in the freezer in small portions. 2. I like to have cooking days when I stock the freezer. (A selection of burgers, portions of veggie bakes and a selection of desserts/sweet snacks) However, sometimes there is the need for that last minute meal or for surprise guests. Both quinoa and brown rice noodles cook quickly and are great for these situations. You can add some cut-up veggies to the quinoa for a one-pot meal. For the rice noodles, cut-up veggies and cook in a pan in 0.5-1cm of water. Add the herbs/condiments of your choice. (You can also do a stir-fry, but I prefer to cook without oil.) Red/yellow lentils dont need soaking and cook quickly, great for soups/vegetable stews. Particularly in the summer, I often have a large salad. Dont be fooled – salads can be very filling, especially when they include legumes (sprouted or cooked)/nuts/seeds. Hope this helps.
