“AYURVEDA IN INDIAN KITCHEN” “Ayurveda is the base of Indian cooking”. Mixing spices together, special dishes for particular season or festivals and even the Indian kitchen remedies are based on Ayurveda. We use the knowledge of Ayurveda daily in our kitchen !!!! For example: ** In cold regions of India (Kashmir, Punjab etc) people use “Mustard Oil” for cooking , which is hot or has a heating effect on the body . Whereas in Coastal parts of India (Kerala , Tamil Nadu etc) where temperatures are quite hot people use “Coconut Oil” for cooking which is cold or has a cooking effect on the body . ** The pulses (Split Legumes “Dal” ) are cooked with Haldi and Hing because pulses they are gas forming and when cooked with a pinch of Turmeric Powder(Haldi) and Asafoetida (Hing) , that makes them less gas forming . ** The heavy stuff like Paranthas (stuffed breads) is served with “Pudina(fresh mint leaves) Chutney”. Mint helps in digestion of heavy food and is the best medicine for stomachache and indigestion. Ayurveda says “ANNAMAYO HI PRANAH” Our life force (PRANA) is dependent on food. In other words you need food to protect your life. So a lot of importance is given to the cooking and act of eating . Ayurvedic cooking is that’s why called “ANNAYOGA” Ayurvedic cooking is not just Indian cooking .You can choose any ingredients in this world for this cooking but the key is “you should know their properties”!! Any style of cooking based on Ayurvedic Principles is Ayurvedic Cooking, just choose the ingredients carefully and use the correct method of cooking. Mostly we use hands for all the processing of food , for putting the ingredients together or mixing the spices with it . The idea behind using hands is that the cook is actually putting his own Pranic Energy into the food while cooking. Ayurveda tells that food is Living Thing ! “Food absorbs all the good and bad vibrations present in the air around”. So, if u chant while cooking it helps in purification of the atmosphere and also has a good effect on the food!!!!! Only this type of food will give you sheer satisfaction and it will nourish not only your body but your mind too. Here is a “Simple and Delicious recipe of INDIAN DAL” A Basic Dal Dish Serves 4 Ingredients 4 cups cold water 1 teaspoon ground Turmeric 2 teaspoon ground Coriander 1 cup any dal (dried beans , peas or lentils ) , washed , soaked and drained 1 teaspoon salt TARKA: 1 tablespoon Ghee 1 teaspoon black Cumin Seeds 1 dried Red Chilli ( crushed or whole ) ½ teaspoon Asafoetida powder 1 teaspoon Minced Garlic METHOD In a heavy saucepan, bring the water to boil. Add the spices, dal and salt . Cover and cook over medium heat for 45 minutes, or until the dal is soft and can be easily mashed with spoon. Remove from heat and allow to cool for about 20 minutes. To make the TARKA, heat the ghee in a ladle, add the spices and sauté for a few minutes , until well roasted and fragrant . Add the tarka to the dal dish and cover immediately with a tight lid. Allow to stand for a few minutes while the flavours blend !!!! Drizzle with Lemon juice or top it with thin ginger slices to aid digestion. Serve with Boiled Rice or Roti (Indian Bread) ! TIP : VEGANS can use Olive oil for the tarka instead of ghee.
