After working with diabetes since 1973, and as a consumer of live-food, plant-source-only cuisine since 1983, I have gained certain insights about what is a healthy fat and the role of healthy fats in creating health. I have observed different things in relationship to different amounts of fat. One of the possible problems that I have seen in long-term use of a 10%-fat diet is the higher percentage of omega-3 and cholesterol deficiencies in people on such a diet, which create significant symptoms and pathologies and compromise over- all health. Omega-3 and cholesterol deficiencies result in less effective cell-membrane function, nerve transmission, serotonin production, and other neurotransmitter production, transmission, and neuroreceptor site functions in the cells. These deficiencies may result in serious clinical symptoms.
