Almond Pancakes (grain, gluten & dairy-free; paleo-friendly) Ingredients: 1 ½ cups blanched almond meal ½ teaspoon bicarb ¼ teaspoon salt ½ teaspoon cinnamon 3 large eggs 4-5 tablespoons coconut milk 2 tablespoons raw honey 1 teaspoon vanilla extract Coconut oil for frying Fruit of choice (sliced strawberries, sliced banana, blueberries etc) Instructions: In a medium bowl mix together almond meal, bicarb, salt and cinnamon. In a separate bowl, blend together eggs, coconut milk, vanilla and honey. Add the liquid ingredients to the dry and mix well. Let rest for a few minutes. Add a little coconut oil to a pan and heat over a medium heat. Add small rounds of batter to the pan. They will be fairly difficult to flip, so keep them small. Cook until it starts to bubble and edges start to form. Flip over carefully and cook the other side until the pancake puffs and firms up. Top with your choice of pure maple syrup, raw honey, fruit & unflavoured greek yoghurt.
