Another awesome dinner today. I roasted veggies (eggplant, zucchini, bell peppers, new potatoes, & patty pan squash) after marinating them in EVOO, rosemary, salt & pepper. Made another version of yesterdays tomato salad with a french bread slice. And baked some lightly breaded butterfly shrimp that Id bought for when my friend was here (she left early so were stuck choking it down - just kidding). It was all so good & Im so full. That sweet husband of mine says I should start a little restaurant - its so good. I asked what I was gonna do on the flop days? He said Id only make the tried & true dishes (from my little white binder). Its a joy to cook for someone who is open to trying new things & the worst comment he will make when something tastes bad to him (or all of us) is I dont think I have to have that again. Love that guy!
