Another recipe Ill leave with you today is called Gazpacho, also very typical in Spain and very very healthy ... A must try...this is a cold tomato soup similar to a V-8 but ten times better.. Todays lunch consisted of cold Gazpacho soup, fried sweet baby peppers in olive oil and chicken breast cooked with 4 drops of olive oil...healthy summer lunches...my favorite How to make Gazpacho: 15 -red tomatoes (buy them when they are really soft and juicy, makes a better gazpacho), cut in 4 pieces each tomatoe 2- cucumbers (peeled and cut in slices) 1/4 sweet onion (also cut up in small slices) 2- green banana peppers (sweet) 2- small golden apples (also peeled and de-seeded and sliced in square slices). 2 small pieces of fresh garlic cloves, peeled and sliced 1 big Tlsp of ground cumin 1/4 glass pure olive oil 1/4 glass of Apple cider vinegar 1/2 Tlbsp of salt Little by little blend all ingredients in a blender, youll have to do this several times because of the quantity and youll also need a really big bowl so you can mix all the liquid together, but after each blender full youll also need to strain each blender full of ingredients to get only the liquid part, I normally start out with all the white/green vegetables with the oil and vinager (apples,garlic,green pepper, onion, salt, cumin, cucumbers), blend all and send through a strainer and put in big bowl but leave in your blender about 1/4 of the liquified ingredients and continue with the tomatoes....as always, check on your salt at the end of the process when all is blended together to see if you want to add more or not...good luckkkkkk Note: after blending all ingredients and straining all, put in refrigerator until it is really nice and cool, serve with bread, deliciousssssss and veryyyyy healthy!!!!!!
