Anyone who loves chocolate and wants to get some extra protein, fiber and iron in their diet... Try these! They are super yummy! I made mine without the choc chips. Black Bean Brownies 1 can black beans 3 eggs 3-4 Tbsp coconut oil (or any other oil you have on hand) 1/3 cup cocoa pinch of salt 1 tsp vanilla 1 tsp baking powder 3/4 cup sugar 1 tsp instant coffee 1/2 cup choc chips (optional) Preheat oven to 350F. Lightly grease and 8x8 baking dish. Blend all ingredients together until smooth in a food processor or blender (except the choc chips) Pour into baking dish. Sprinkle choc chips on top Bake until top is dry and edges start to pull away from the sides (approx 30 min) And then you will have some delicious, healthy brownies! To make it even healthier, cut down the sugar some, and/or use honey instead of sugar
