Anyone who thinks that nitrites in cured meats will give you cancer *needs to read this* takepart/article/2014/10/08/cured-meat-nitrites-cancer?cmpid=foodinc-fb It puts to bed the horseshit arguments about nitrite free cured meats, which is a lie sold to you by Whole Foods and other similar outlets. (Yes, you can cure meats without it, but to do it right you need to be very, very good. And nitrites have been used in cured meats for a millennium or more.) If you still think nitrites in salami are somehow bad after reading this, you pretty much should unlike this page. Yes, I feel that strongly about it.
