Apologies for having disappeared for so long, I had bronchitis and feeling very sorry for myself. Im back to work tonight and back in control. How do I know this? I have been doing some savy cooking. On my return to health i noticed a number of foods that had not been used as I had big plans but couldnt manage them from my bed. You know the kind of things, baby potatoes (sprouting), onions (a lot of them because Aldi were selling them cheaply) and left over boiled ham. My mam used to make this fried potato stir fry thing when we would go camping and it was the tastiest thing EVER (especially because you were probably stuck in a small tent in the middle of France and it was raining as much as at home), she would cook potatoes, fry onions and rashers (lardons in France) and mix them all together on a hot frying pan. So this was my inspiration today. Its a great recipe for using leftovers and making them tasty. I also popped in some small florets of broccoli and finely chopped garlic. You can use whatever is knocking about that would normally go into a stir fry. Secondly I had leftover mashed potatoes, broccoli and carrots after the kids dinner so popped them into a bowl with tbls garam masala , 1/4 tsp cayenne pepper and 1/2 tsp smoked paprika with a tin of mixed beans. Mixed them all well then using a ladle to measure each portion, shaped them into burgers and wrap well in clingfilm, before putting them in the freezer. I was first shown how to do these by The Hairy Turnip and have never made the same burger twice because my leftovers are always different, but always YUMMY.
