Apple Cake Prep Time: 15 minutes Cook Time: 55 minutes Total Time: 1 hour, 10 minutes Yield: Serves 10 This apple cake is lovely and moist and filled with apple. Serve a thick wedge of this cake, either cold or slightly warmed, with cream, custard or even caramel sauce. It works well for afternoon tea or as a dessert. Ingredients 2 3/4 cups (410g or 14 1/2oz ) plain flour 2 tsp baking powder 1/4 tsp salt 1/2 tsp cloves, ground 1 1/4 tsp cinnamon, ground 150g (5 1/2oz) unsalted butter, softened 1 cup (200g or 7oz) white sugar 2 large eggs 1 cup (250ml or 8 1/2fl oz) milk 3 small green apples 1 1/2 tbsp caster sugar, extra 1/4 tsp cinnamon, extra Instructions Preheat oven to 180°C (350°F). Prepare a round 20cm (8 inch) cake tin by greasing the base and sides with butter and lining with baking paper. Sift the flour and add the baking powder, salt and spices. Stir to ensure everything is well combined. Cream the butter and sugar together. Add the eggs one at a time, beating well after each addition. Fold in the flour mix and milk in two batches until well combined. Dont over mix. Peel and core the apples. Slice into 6mm (1/4 inch) slices and then chop into approx 2cm (3/4 inch) pieces. Fold the apple through the batter. Scrape the mixture into the prepared tin. Sprinkle the top with the extra sugar and cinnamon. Bake for 45 - 55 minutes or until a skewer inserted into the middle comes out clean. Leave in the tin to cool for approx 10 minutes before removing from the tin and transferring it to a wire rack to cool. You can let it cool completely or serve it while it is still warm.
