Apple Stacked Cake Apple Glaze 1 c. sugar ½ c. apple cider or apple juice ½ c. real butter 2 tbs. corn syrup 1 ½ tsp vanilla Bring to a boil cook 4 min keep warm set aside for cake. Or microwave mixed ingredients in a plastic bowl on high for 20 sec. Filling Use 8 c. sliced apples your choice cut into ½ in. wedges 1 c. packed brown sugar 3 tsp lemon juice Bring the above ingredients to a boil then reduce heat and cook 25 min or until apples are tender. Set aside Cake: 2 sticks or 1 c. softened butter room temp. 2 c. granulated sugar 5 lg. eggs separate yolks 2 tsp apple spice mix 3 c. plain flour separate ¼ c. set aside 1 c. buttermilk 1 tsp baking soda 1 c. chopped and toasted pecans 1 c. apple butter Blend butter until creamy. Now gradually add sugar until fluffy. Add egg yolks 1 at a time blend well. Mix 2 ¾ c. flour and apple pie spice. Mix baking soda with buttermilk now add flour to butter mix and alternate with buttermilk ending with flour mix well. Mix remaining flour with pecans and stir into cake batter also adding apple butter mix well. Now beat egg whites until stiff and stir half into cake batter and remaining half fold into cake batter. Using 6 ( 8 in. ) sprayed cake pans with parchment paper divide batter among prepared pans. Bake 350 degrees for 7 min top rack now rotate to bottom rack for 9 more min. Remove then brush 3 tbs. apple glaze over each layer of cake in the pans let sit 10 min. then remove cake from pans to wire cooling racks. Assemble cake in layers adding cooked apples over glazed cake layers top last layer with apples and use remaining apple cider glaze drizzled over cake.
