As requested... Recipe for Chicken & Mango Pasta Salad (quick, easy, make in advance, super yum) For 4 peeps: 2 chicken breast, no skin (tip: simply pull it off its as cheaper to buy it with it on) Half a large packet shell pasta (I like shell pasta as it holds the chicken in its little pocket) 2 large ripe mangoes 1 ripe avocado Poach the chicken breasts in water or chicken stock until cooked through. Remove from liquid and allow to cool. Once cooled enough to handle, shred into small bits. Cut mangoes and divide cheeks into their little squares, add to chicken. Cut any remaining fruit away from the stone and add that too. By hand, squeeze the pulp & juices from the skins & stones into the chicken, this gives a wetter, tastier consistency. Cook & strain pasta. Allow to cool off a bit then mix with chicken & mangoes. Cut avocados into slices, cubes or whatever you manage to get, mix in or add on top of chicken & pasta. You could also use a Chilli & Mango (Coles) dressing to add more liquid if you want. I usually find the pulp juice is enough. Keep in fridge until youre ready to devour it. Enjoy :)
