As requested ..... Recipe for Smartie Cookies. (Hope this works). Smartie cookies (makes 10 large cookies or more smaller ones) 100g unsalted butter, softened 150g soft light brown sugar 1/2tsp vanilla extract 1 large egg, room temperature 20g cocoa 180g plain flour 1/2tsp bicarbonate of soda Pinch of salt 50-100g Smarties (depending on whether you want to add them to the mixture or just use to decorate. Method Preheat oven to 170C/325F/gas 3. Beat eggs and sugar together until light and fluffy. Gradually beat in egg and vanilla extract. Mix in flour, bicarbonate of soda, salt and cocoa until it reaches a putty consistency. If you wish to add Smarties to the mixture, stir in 50g. Roll into 10 balls using hands and place well apart on baking sheet lined with silicon paper (I bake 4 at a time). Bake for 10 minutes, remove from oven and tap down surfaces with a metal spatula, stud with remaining Smarties. Return to the oven for a further 8-10 minutes until firm. Cool on a wire rack.
