At the Culinary Institute in St. Helena, CA, Chucks legacy: The Williams Center for Flavor Discovery. Inside the building, some of Chucks cookbooks, original pages from early catalogs, iconic pieces of cookware and dinnerware. We were lucky enough to meet the head of the Farm to Table program, Chef Larry Forgione (yes, father of Iron Chef Mark Forgione), who knows Chuck and often hosted James Beard at his iconic NYC restaurant, An American Place. He would like the Center renamed to The Williams Center for Farm to Table Studies. I think Chuck would approve.
