BICOL EXPRESS = the world famous hot & spicy dish... liken to Philippine National Railways (PNR) fastness....Kakaan na po kita! ***TABLE TALK . . . . by Mon Prena March 3, 2014 at 4:56pm *** Being born at the foot of Mayon Volcano in Albay province means Oragon --- meaning magaling in tagalog lingo! Good in English language---- Oragon in eating spicy dishes is one. Ye, this is our very first topic and dish to be featured! ==== HOT & SPICY! BICOL EXPRESS (good for 5 persons) Ingredients = 1/2 kilo pork liempo (cut into small bite size) = 1/4 kilo bagoong alamang (white variety) = 1/2 siling haba (same as being used for sinigang) - cut into diagonal bite size = 1/8 kilo siling labuyo (crushed) = 3 shells coconut - grated. milk extracted . Set aside 2 cups kakang gata = 1 bug pc of ginger, crushed = 2 medium size balls of garlic. Crushed = 2 stalks of lemon grass (tanlad). Crushed = salt to taste Procedure 1. Put into deep frying pan (kawali) the following --: sliced pork liempo, crushed ginger, crushed garlic, bagoong alamang, crushed stalks of lemon grass and pour the coconut milk (be sure you mix the left over kakang gata after getting the 2 cups to the 2nd milking of the grated coconut meat. Simmer for 30 minutes up to 45 minutes or until the pork liempo becomes tender. 2. Put the diagonally sliced siling haba together witht he 2 cups kakang gata. Simmer for 15 minutes. Add the crushed siling labuyo. Seasoned with salt. 3. As soon as the oils emanates, Serve. Viola, you have now, world famous Bicol Express! Bicol Express=== How does this got its name? In the olden days, the Philippine National Railways (PNR) was one of the fastest mode of transports system in Bicol region in reaching Manila, the fastness of the train was associated to the dish. In so doing, when someone not so akin in eating the hot & spicy bicol dish; they steadfastly getting a glass of water as fast they could. . ., hence the name was associated with the fastness of the mode of transport system. == Bicol Express, now a by word not only in the Philippines but, even in abroad. === (Mon Prena)
